WellSpan Launches Revolutionary AI-Powered Robotic Kitchen

WellSpan

Introduction

Hospital food is getting a major upgrade. WellSpan Health has launched Fresh Take Eatery — a first-of-its-kind, AI-powered robotic kitchen at WellSpan York Hospital in Pennsylvania. This breakthrough system delivers hot, healthy meals around the clock. Moreover, it marks the first-ever deployment of RoboEatz’ Autonomous Robotic Kitchen (ARK) technology in a US healthcare setting. The launch signals a bold new direction for how hospitals think about food, space, and workforce challenges.

What Is Fresh Take Eatery?

Fresh Take Eatery is a fully automated, on-demand dining system built specifically to serve patients, visitors, and hospital staff. Unlike a traditional cafeteria, it operates 24 hours a day, seven days a week. As a result, staff working overnight shifts and patients with late-night needs can access fresh, made-to-order meals at any hour.

Addressing a Real Capacity Gap

WellSpan York Hospital serves approximately 10,000 people on campus every day. However, conventional kitchen operations cannot always meet that level of demand. Fresh Take Eatery solves this by effectively doubling dining capacity during peak periods. Remarkably, it accomplishes this in just 400 square feet — a fraction of the space a traditional kitchen expansion would require.

“As the WellSpan York Hospital campus continues to grow, the demand for food services has increased,” said Alyssa Moyer, vice president of WellSpan Health and president of WellSpan York Hospital. Fresh Take Eatery, she added, gives team members and visitors another option for healthy, fresh meals throughout the day.

The Technology Behind the Kitchen

The system runs on RoboEatz’ Autonomous Robotic Kitchen (ARK) platform, powered by an articulated robotic arm developed by ABB Robotics. This arm works with the precision and dexterity of a trained chef. Crucially, it also maintains the consistency and traceability that healthcare environments demand.

How the ARK System Works

When a customer places an order, the robotic arm retrieves ingredients from storage and routes them through one of four simultaneous cooking modules. After cooking, the system handles automated plating and serving. Finally, it completes the process with self-cleaning functionality — all without human intervention.

“Flexible, collaborative robotics can solve problems that traditional automation cannot,” explained Jose Manuel Collados, manager of Product Line Service Robotics at ABB Robotics. He highlighted the system’s ability to work alongside human co-workers in dynamic kitchen spaces, without requiring complex programming.

Key Capabilities of the ARK System

Fresh Take Eatery brings a powerful set of features to the hospital dining experience:

  • Four simultaneous cooking modules allow multiple meals to prepare at the same time
  • Up to 80 fresh ingredients are stored and managed autonomously on-site
  • Hundreds of meal combinations are available, including pasta dishes, bowls, and salads
  • Precision portioning and demand-based preparation actively reduce food waste
  • Autonomous self-cleaning keeps the system hygienic without manual labor
  • 24/7 operation ensures food access at any hour, for any shift

Furthermore, WellSpan dietitians played a direct role in developing the menu. The kitchen uses the same local ingredients found in WellSpan York Hospital’s existing cafeteria. This approach supports healthy eating while maintaining nutritional standards patients and staff can trust.

Why This Matters for Healthcare Foodservice

Fresh Take Eatery is more than a convenience upgrade — it represents a fundamental rethinking of institutional foodservice. Traditional kitchens face three hard limits: labor availability, physical space, and fixed operating hours. The ARK system eliminates all three.

A Human-Centered Solution to Operational Challenges

WellSpan CEO Roxanna Gapstur, Ph.D., R.N., framed the launch as part of a broader philosophy. “Our commitment to adopting new innovative approaches stretches beyond clinical care,” she noted, describing Fresh Take Eatery as the organization’s human-centered approach to solving operational problems.

Additionally, the system tackles a significant workforce challenge. Recruiting and retaining kitchen staff for round-the-clock hospital operations is notoriously difficult. Robotic automation reduces that dependency — thus making the system more resilient and reliable over time.

Reducing Food Waste Through Precision

Another major benefit is sustainability. Through its AI logic engine, the ARK system uses demand-based preparation to minimize waste. Ingredients are portioned precisely for each order rather than prepared in bulk. Consequently, hospitals can reduce both costs and environmental impact.

The Partnership Driving Innovation

Fresh Take Eatery is the product of a deep collaboration between WellSpan Health, RoboEatz, and ABB Robotics. Together, these organizations combined clinical expertise, culinary technology, and advanced robotics engineering to create something entirely new for healthcare.

Notably, WellSpan Health, ABB Robotics, and food service company Aramark are also strategic investors in RoboEatz. This financial commitment reflects genuine confidence in the technology’s long-term potential to transform food service across multiple industries — not just healthcare.

“Fresh Take Eatery represents a fundamental shift in how we think about institutional foodservice,” said Alex Davidkhanian, founder and board member of RoboEatz. He described ARK as an entirely new category of food infrastructure — one that scales with demand and operates continuously, free from the constraints that limit traditional kitchens.

A Model for the Future

WellSpan’s success could reshape food service well beyond hospitals. Industry leaders believe this model offers a scalable template for colleges, corporate campuses, and other community institutions facing similar workforce and space challenges.

For now, Fresh Take Eatery complements — rather than replaces — WellSpan York Hospital’s existing dining options. Together, they give the hospital’s 10,000 daily visitors a fuller, more flexible range of meal choices. As healthcare systems nationwide continue to grow, solutions like this one will likely become standard rather than exceptional.

WellSpan’s launch places York, Pennsylvania at the center of a quiet revolution in robotic foodservice. Furthermore, it demonstrates that innovation in healthcare does not stop at the clinical level — it extends all the way to the cafeteria line.
